Try this savory, all-live sage walnut meat loaf. The best part about this recipe is it has all the ingredients to keep you trim, fit and in tip top shape during the holidays. Some of it’s key ingredients, sage, celery and walnuts are foods that provide superior nutrition and have tremendous nutritional and even spiritual benefits.

Sage

  • Sage is high in vitamin K, which serves many functions for healthy blood circulation. It allows your blood to clot normally and even assists in keeping your arteries pliable and flexible. Vitamin K has also been proven to protect against bone loss as a result of menopause and it protects against liver and prostate cancer. Sage also has anti-inflammatory properties and even promotes improved brain function. In fact, Chinese sage contains active compounds that are similar to drugs used to treat Alzheimer’s Disease.

Spiritually speaking, sage has and continues to be used to clear negative or stagnant energy from dwelling places and even human beings. To clear negative or stagnant energy from a room or house, simply light dried sage leaves until heavy smoke is produced, blow out and smudge from the rear of your dwelling to the front, being sure to pass over all openings.

Walnuts

  • Like sage, walnuts are great for the brain. Just look at them. They look like mini cerebral cortexes. They are high in omega 3 fatty acids which is a key to healthy brain function, according to a study released earlier this year by the journal Neurology. The journal found that stunted levels of the fatty acid were associated with poor mental acuity test performance and dementia.

Celery

  • It is said that fruits and vegetables are often good for parts of the body they resemble. This is the case with celery. Celery stalks look like bones. Long, sturdy and strong, celery is an anti-inflammatory and even helps to relieve symptoms of arthritis and high blood pressure. Celery is also an excellent source of sodium. So, if you’re attempting to kick the salt habit, try soaking celery pieces in lemon juice for 24 hours then drying it in a dehydrator. When completely dried, grind down into a powder and use instead of salt.

Savory Holiday Walnut-Sage Nutmeat Loaf

Ingredients:

  • 2 cups soaked and dried walnuts
  • 2 cups celery or 2 celery stalks
  • 1/3 cup red onion
  • 15-20 fresh sage leaves
  • 1/2 tsp chopped habanero pepper
  • 2 garlic cloves (optional)
  • 4 TBS coconut aminos
  • 3 TBS first cold pressed olive oil
  • 2 tsp whole cumin seeds
  • 1 TBS flax flour or milled flax seed

Directions:

  1. Add all ingredients to your food processor.
  2. Blend until all mixture is incorporated but still slightly chunky.
  3. Remove from food processor.
  4. Add to loaf pan and bake for 30 minutes at 250 degrees.

Also: If you own a dehydrator, place in dehydrator for 4-6 hours at 105 degrees. Enjoy with your favorite steamed vegetable or wild rice.

  1. Questions: If I use a blender, will it make it watery? And what are coconut aminos, and if I can’t find it, what can I use as a substitute??

  2. Blessed Love Le, Yes, if you use a blender it will make it liquid. Also, keep in mind that you almost always have to add water to a blender for optimal function and to prevent from burning out the engine. You can chop by hand if you want or get a small food processor from K-Mart or Target for under $20. It will be small and you’ll have to do recipe in batches. It’s no big deal. Coconut aminos, like Braggs liquid aminos, but not made from soy. It’s made from coconut. You can just add sea salt or maybe oil cured sea-salted black or kalamata olives too. : ) I trust this was helpful. : )

  3. I made a nutloaf for thanksgiving, and it was really, really ,really good. I actually felt happy that nobody in my household wanted any because I got to eat it all to myself, lol. I did not make this one, but thanks for the inspiration. I did use some of the ingredients listed here. Instead of walnut, I used cashews. I also put mushrooms into it. Delicious.
