Creamy Spiced Carrots

Serves 2-4

Equipment Needed: Blender

Ingredients

  • 2 cups shredded carrots
  • 5 medjool dates
  • 4 TBS virgin coconut oil
  • 1″ thumb of ginger
  • 1/2 tsp alcohol-free vanilla or 1/2 tsp fresh vanilla bean
  • 2 TBS almond butter
  • 1/2 cup spring water
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg

Directions

  1. Add water and other ingredients to blender.
  2. Blend on high until mixture is creamy and smooth.
  3. Remove from blender, either you can enjoy at room temperature, or place in food dehydrator for 1 hour to warm.
