Ok, so I have to admit, even as a living foodist sometimes I think about the smokey flavor of veggie bacon, which takes me back to an even earlier time in my life when I ate the real thing — I’m talking about PORK BACON. Yes, that salty, greasy, crispy slice of taste-bud heaven.

Before I became aware of the harmful nitrates and nitrites, as well as the dangers of eating pork and other processed meats in general, I enjoyed bacon with just about anything. But my all-time favorite bacon recipe was the simple bacon lettuce tomato sandwich.

But who says when you’re all-live that you have to give up the flavors you love? Not me. In fact, on a whim I created this all-live bacon-less, pork-less sandwich. While it’s not bacon and never can be, it definitely will fulfill the craving, even for the most advanced bacon enthusiasts. Try this No Oink Oink Zucchini, Lettuce, Tomato, Avocado sandwich and see if it appeases your bacon craving.

No Oink-Oink ZLT sandwich

Equipment Needed

  • Food Processor
  • Dehydrator

Serves 2

Onion-Flax Sunflower Bread

Ingredients

  • 2 cups soaked and dried sunflower seeds
  • 2 TBS smoked paprika or regular paprika
  • 3/4 tsp black salt, (Kala Numak)
  • 1/4 Habanero pepper
  • 3 TBS golden flax seeds
  • 1 TBS whole fennel seeds
  • 1 TBS first cold pressed olive oil
  • 1 cup red onion

Zucchini Strips

  • 3 medium yellow or green zucchini
  • 1/3 cup coconut aminos
  • Paprika to taste

Onion-Flax Sunflower Bread

Directions

  1. Place all ingredients in the food processor.
  2. Process until all ingredients are well incorporated and mixture is thick and pasty-like.
  3. Remove and place on dehydrator sheet
  4. Form mixture into a ball
  5. Use rolling pin and flatten evenly, until mixture is flat on dehydrator sheet
  6. Place in dehydrator for 3-5 hours at 110 degrees

Zucchini Strips

Directions

  1. Slice zucchini strips into vertical 1/8” inch slices.
  2. Place in bowl with coconut aminos.
  3. Marinate for up to 3 hours.
  4. Lay zucchini strips on dehydrator sheet.
  5. Dehydrate until crispy at 110 degrees.

Sandwich Fixings

Ingredients

  • 1.5 Avocado
  • 1/4 cup fresh cilantro
  • 4 fresh basil leaves
  • 1/4 cup red bell pepper, sliced thinly
  • Green leaf lettuce
  • Finely chopped habanero pepper (optional)
  • Organic mustard made with apple cider vinegar
  • Roma tomatoes

Assemblage

  • Add mustard to bread
  • Add sliced tomato to one side
  • Add sliced bell peppers
  • Add finely chopped habanero pepper
  • Add green leaf lettuce
  • Add avocado
  • Add zucchini strips
  • Add mustard to other side of sunflower bread
  • Close & Enjoy.
