The Kitchen, Boulder and Denver

When the three friends Hugo, Kimbal and Jen conceived the idea for their restaurant in 2002 it was over the comfort of dinner and conversation. By 2004 the trio launched the idea for a dining experience that would incorporate great taste and love for the community.

Thus “The Kitchen” was born opening as Boulder’s Community Bistro – a restaurant built by a community of farmers, ranchers and food lovers for the sustainable enjoyment of the Boulder community and the restaurants staff.

Their environmentally-friendly practices, commitment to composting, wind power generated electricity, eco-friendly packaging and of course using old cooking oil to power an employee’s car, is just as fitting as their extensive menu.
