Want to keep a trim waistline and be able to smile about it? Try these fast and easy live vegan lettuce tacos. Bursting with flavor and nutrients, these tacos make it easy to incorporate more live fruits, vegetables, seeds and nuts into your busy schedule.

Equipment Needed

  • Food Processor
  • Blender

Ingredients

Walnut Taco Meat

  • 2 cups soaked walnuts
  • 2 medium carrots
  • 1 celery stalk
  • 1/2 package of Trader Joes taco seasoning or another organic taco seasoning
  • 1/3 cup red onion
  • 1/3 cup red bell pepper
  • 1/2 tsp ground cumin
  • 1 TBS extra virgin olive oil
  • 2 nori seaweed sheets

Cashew Sour Cream

  • 2 cups soaked cashew
  • 2 TBS lemon juice
  • 1/2 tsp chili powder
  • 1/4 cup Brewers Yeast or Nutritional Yeast (Optional)
  • 1/2 tsp sea salt (Optional)
  • 1/2 cup spring water

Toppings and Lettuce Shells

  • 1 package of romaine lettuce hearts
  • Tomatoes
  • Cilantro
  • Avocado
  • Papaya (optional)
  • Green onion

Directions

Walnut Taco Meat

  1. Place all ingredients in a food processor.
  2. Process until well incorporated and is a moist crumble.
  3. Remove mixture and set aside.
  4. For a spicy kick, add cayenne, but be easy.

Cashew Sour Cream

  1. Place all ingredients in a blender.
  2. Blend until smooth.
  3. Remove from blender and set aside.

Lettuce Hearts & Toppings

  1. Rinse romaine lettuce hearts.
  2. Remove bottom 1” or thick white rib.
  3. Use 2 leaves to form 1 taco.
  4. Place one leaf inside of the other leaf.
  5. Add taco nut meat, chopped cilantro, tomatoes, avocado, green onion, chunked papaya and cashew sour cream.
  6. Serve and enjoy.
